Ingredients

12-16 sardines, cleaned and
scaled

salt and freshly ground
black pepper

5ml/1 tsp paprika
-
3 red pepper, halved
-
45ml/3 tbsp olive oil
-
45ml/3 tbsp chopped fresh
coriander

1 red onion, chopped
Method:

Sprinkle the sardines with salt, pepper and
paprika. Place the peppers, skin side up, under
a hot grill until the skin is charred.

Strip off the skin when cool. Roughly chop the
peppers and place in a blender with the oil,
coriander and onion.

Blend until smooth. Season the sauce with salt
and pepper. Grill the sardines for 4 minuets on
each side and serve hot with the sauce.
