Italian Fish Recipes - Sardines and Coriander Sauce (Sardine e Salsa di Coriandolo) Recipe

 

Ingredients       

  • 12-16 sardines, cleaned and scaled

  • salt and freshly ground black pepper

  • 5ml/1 tsp paprika

  • 3 red pepper, halved

  • 45ml/3 tbsp olive oil

  • 45ml/3 tbsp chopped fresh coriander

  • 1 red onion, chopped      


Method:

  1. Sprinkle the sardines with salt, pepper and paprika. Place the peppers, skin side up, under a hot grill until the skin is charred.

  2. Strip off the skin when cool. Roughly chop the peppers and place in a blender with the oil, coriander and onion.

  3. Blend until smooth. Season the sauce with salt and pepper. Grill the sardines for 4 minuets on each side and serve hot with the sauce.
