Italian Fish Recipes - Sardines in Vine Leaves (Involtini di Faglie di Vite con Sardino) Recipe

Ingredients 

  • 12 vine leaves

  • 50g/1/4 cup unsalted (sweet) butter, softened

  • 12 fresh sardines, as small as possible, cleaned and scaled if necessary

  • 1.5ml/1/4 tsp freshly ground black pepper

  • 15ml/1 tbsp lemon juice

  • 1.5ml/1/4 tsp chopped fresh sage

  • 2 garlic cloves, crushed            


Method:

  1. Brush each vine leaf with the softened butter and place a sardine in the centre of each leaf.

  2. Blend the remaining butter with the pepper, lemon juice, sage and crushed garlic and dot over each sardine.

  3. Wrap up the vine leaf and secure with a cocktail stick (toothpick) or tie with fine string. Preheat the grill and place the vine leaf parcels on the rack.

  4. Grill for 3 minutes, depending on the size of each sardine, allowing 1 minute per 2.5cm/1 in of fish, until the edges of each leaf turn black. Place on a warmed serving dish.
