Italian Fish Recipes - Seasoned Red Mullet (Triglie Condita) Recipe

Ingredients    

  • 4 red mullet, cleaned and scaled

  • salt and freshly ground black pepper

  • 1 orange, sliced

  • 45ml/3 tbsp chopped fresh oregano

  • 1 onion, sliced

  • grated rind and juice of 1 lemon

  • 30ml/2 tbsp chopped fresh mint

  • 5ml/1 tsp paprika

  • 60ml/4 tbsp plain yoghurt         


Method:

  1. Season the mullet with salt and pepper. Place the orange slices, oregano and onion in a large frying pan and place the fish on the top.

  2. Sprinkle over the lemon rind and juice and pour over 150ml/2/3 cup water.

  3. Bring to the boil. Cover with a lid or foil and cook gently for 20 minutes.

  4. Bland the mint, paprika and yoghurt together and season with the salt and pepper  and sere with the fish.
