Seasoned Red Mullet (Triglie Condita)

Ingredients

4 red mullet, cleaned and
scaled
-
salt and freshly ground
black pepper

1 orange, sliced
-
45ml/3 tbsp chopped fresh
oregano
-
1 onion, sliced
-
grated rind and juice of 1
lemon
-
30ml/2 tbsp chopped fresh
mint
-
5ml/1 tsp paprika
-
60ml/4 tbsp plain yoghurt
Method:
-
Season the mullet with salt and pepper. Place
the orange slices, oregano and onion in a large
frying pan and place the fish on the top.

Sprinkle over the lemon rind and juice and pour
over 150ml/2/3 cup water.

Bring to the boil. Cover with a lid or foil and
cook gently for 20 minutes.

Bland the mint, paprika and yoghurt together and
season with the salt and pepper and sere
with the fish.
