Simple Prawns (Gamberetti al Naturale) Recipe
Ingredients

600 ml/2

cups water
-
300 ml/1
1/4
cups white wine
-
15 ml/1 tbsp red wine vinegar

1 large onion, cut
in half
-
2 cloves
-
3 carrots, sliced
-
Large bunch of
fresh herbs
-
1/2 lemon, sliced
-
16 raw king prawns
(jumbo shrimp), peeled

Cream of Fennel Sauce
Method:
-
Simmer all the ingredients except the prawns together in a large saucepan
for 30 minutes and strain. Discard the
vegetables.

Return the stock to the heat and
boil for 5
minutes to reduce. Add the prawns, lower the
heat and poach for 5-6 minutes.

Remove from the
liquid with a slotted spoon and reserve the
liquid for stock or soup the next day. Serve
with Cream of Fennel Sauce.
