Sole and Madeira Sauce (Sogliola e Salsa Madera) Recipe
Ingredients

1 egg
-
60 ml/4 tbsp double
(heavy) cream
-
30 ml/2 tbsp Madeira
-
Salt and freshly
ground black pepper
-
30 ml/2 tbsp chopped fresh
parsley
-
4 sole fillets
-
Butter for greasing
-
1 lemon, cut into
wedges
Method:

Combine the egg, cream, Madeira, salt, a dash of pepper and the parsley.

Place the sole fillets in a large buttered
casserole dish (Dutch oven).
-
Pour over the egg
mixture and leave to stand, covered, for 1 1/2
hours.

Cook the fish and marinade in a
preheated oven at 180°C/350°F/gas mark 4 for 20
minutes and serve with the lemon wedges.
