Squid and Crayfish (Calamari e Aragosta)

Ingredients

15 ml/1 tbsp olive
oil
-
25 g/1 oz/2 tbsp
unsalted (sweet) butter
-
1 onion, chopped
-
1 garlic clove,
crushed
-
45 ml/3 tbsp chopped
fresh parsley
-
200 g/7 oz small squid, sliced in
rings
-
225 g/8 oz/1 cup long-grain rice
-
45 ml/3 tbsp brandy
-
150 ml/2/3 cup
fish or chicken stock
-
Salt and freshly
ground black pepper
-
2 crayfish, cleaned and cooked
Method:

Heat the oil and butter and fry (sauté) the onion, garlic, parsley, squid
and rice for 3 minutes.

Add the brandy and
ignite. Allow the flames to die down then pour
in the stock.

Bring to the boil, stirring and
lower the heat. Simmer for 15 minutes until the
rice is cooked.

Season with the salt and pepper
and add the cooked crayfish. Leave to heat for
3-4 minutes, stirring occasionally.
