Venetian Prawns (Gamberetti alla Venezina)

Ingredients

150 ml/2/3 cup
olive oil
-
900 g/2 lb whole king prawns (jumbo shrimp)
-
15 ml/1 tbsp
chopped fresh parsley

1 bay leaf
-
5 garlic cloves,
chopped
-
150 ml/2/3 cup dry white wine
-
Salt and freshly
ground black pepper
-
Juice of
1 lemon
Method:
-
Heat the oil in a pan and add the prawns,
parsley, bay leaf and garlic.
-
Reduce the heat
and cook for 5 minutes. Add the white wine and
boil rapidly for a further 5 minutes until
reduced.
-
Season with salt and pepper, sprinkle
with the lemon juice and place on a warmed
serving plate.
