Italian Fish Recipes - Venetian Prawns (Gamberetti alla Venezina) Recipe

 

Ingredients             

  • 150 ml/2/3 cup olive oil

  • 900 g/2 lb whole king prawns (jumbo shrimp)

  • 15 ml/1 tbsp chopped fresh parsley

  • 1 bay leaf

  • 5 garlic cloves, chopped

  • 150 ml/2/3 cup dry white wine

  • Salt and freshly ground black pepper

  • Juice of 1 lemon


Method:

  1. Heat the oil in a pan and add the prawns, parsley, bay leaf and garlic.

  2. Reduce the heat and cook for 5 minutes. Add the white wine and boil rapidly for a further 5 minutes until reduced.

  3. Season with salt and pepper, sprinkle with the lemon juice and place on a warmed serving plate.
