Italian Ice Cream and Sorbets Recipes - Iced Amaretti Soufflé (Soufflé di Amaretti Gelato) Recipe

Ingredients

  • 100 g/4 oz Almond Macaroons or ready made, broken

  • into pieces

  • 45 ml/3 tbsp Amaretto liqueur

  • Grated rind and juice of 1 lemon

  • 15 ml/1 tbsp powdered gelatin

  • 6 eggs, separated

  • 225 g/8 oz/1 cup light brown sugar

  • 450 ml/2 cups double (heavy) cream, lightly whipped

  • 50 g/2 oz dark (semi-sweet) chocolate, grated


Method:

  1. Soak the crushed biscuits in the liqueur and set aside. Place the lemon juice and rind in a bowl and sprinkle over the gelatin leave for 5 minutes.

  2. Stand the bowl in a pan of hot water and stir until the gelatin is dissolved.

  3. Whisk the egg yolks and sugar together until pale and thick. Fold into the biscuit mixture and stir in the gelatin and whipped cream.

  4. Whisk the egg whites until stiff and fold into the Amaretti mixture.

  5. Spoon the mixture into a soufflé dish, scatter over the grated chocolate and freeze until firm.
