Italian Ice Cream and Sorbets Recipes - Lemon Granita (Granita di Limone) Recipe

Ingredients

  • 600 ml/2 1/2 cups water

  • 175 g/6 oz/3/4 cup granulated sugar

  • Grated rind and juice of 6 lemons

  • 5 mint leaves

  • 1 egg white, lightly beaten

  • 15 ml/1 tbsp caster (superfine) sugar


Method:

  1. Put the water and granulated sugar in a saucepan. Heat gently until the sugar has dissolved.

  2. Bring to the boil and boil for about 5 minutes, without stirring, until a thick syrup has formed but do not allow to brown. Remove from the heat and set aside to cool.

  3. Add the lemon rind and juice to the cold syrup. Pour into a freezer proof dish and place in the freezer compartment for 1 hour.

  4. Remove from the freezer and whisk to break up the ice crystals. Return to the freezer and freeze for 3 hours, stirring every 45 minutes.

  5. Meanwhile brush the mint leaves with the beaten egg white. Dip the leaves into the caster sugar and leave to dry on a rack for 1 hour before using.

  6. Spoon the granita into individual glass dishes and decorate with the frosted mint leaves.
