Italian Ice Cream and Sorbets Recipes - Strawberry Ice Cream (Gelato alla Fragola) Recipe

Ingredients

  • 450 ml/2 cups milk

  • 1 vanilla pod

  • 5 egg yolks

  • 50 g/2 oz/1/4 cup caster (superfine) sugar

  • 350 g/12 oz strawberries, hulled

  • Juice of 1/2 lemon

  • 750 g/1 1/4 pts/3 cups double (heavy) cream


Method:

  1. Bring the milk and vanilla pod to the boil. Whisk the egg yolks and sugar together in a bowl until pale and creamy and pour on the milk. Whisk for 1 minute.

  2. Place the mixture in a clean saucepan and stir over a low heat until the custard thickens and coats the back of the spoon. Do not allow to boil. Leave to cool.

  3. Puree the strawberries and lemon juice in a blender or food processor and pass through a sieve (strainer) to remove the small strawberry pips.

  4. Blend the strawberries, cream and custard together and place in a container in the freezer for 2 hours.

  5. Remove from the freezer and whisk with a fork for 1 minute. Refreeze and repeat the process twice more.
