Tangerine Sorbet (Sorbetto
al Mandarino) Recipe
Ingredients

4 tangerines
-
600 ml/2 1/2 cups water
-
175 g/6 oz/3/4 cup
granulated sugar
-
1 egg white, stiffly
whisked

15 ml/1 tbsp caster
(superfine) sugar
Method:

Thinly peel the rind of the
tangerines with a potato peeler and place in a
saucepan with the water.

Bring to the boil and add the
granulated sugar. Stir until the sugar has dissolved
and boil for 5 minutes.

Remove from the heat and set
aside to cool. Squeeze the juice from the tangerines
and strain into the cool syrup.

Beat in the egg white and pour
into a freezer proof container. Place in the freezer
for 1 hour.

Remove from the freezer and
whisk with a fork until well blended.

Return to the freezer and
freeze for 3 hours, whisking every 45 minutes.
