Italian Ice Cream and Sorbets Recipes - Tangerine Sorbet (Sorbetto al Mandarino) Recipe

Ingredients

  • 4 tangerines

  • 600 ml/2 1/2 cups water

  • 175 g/6 oz/3/4 cup granulated sugar

  • 1 egg white, stiffly whisked

  • 15 ml/1 tbsp caster (superfine) sugar


Method:

  1. Thinly peel the rind of the tangerines with a potato peeler and place in a saucepan with the water.

  2. Bring to the boil and add the granulated sugar. Stir until the sugar has dissolved and boil for 5 minutes.

  3. Remove from the heat and set aside to cool. Squeeze the juice from the tangerines and strain into the cool syrup.

  4. Beat in the egg white and pour into a freezer proof container. Place in the freezer for 1 hour.

  5. Remove from the freezer and whisk with a fork until well blended.

  6. Return to the freezer and freeze for 3 hours, whisking every 45 minutes.
