Adrano Fillet of Beef (Filleto Adrano)
Recipe
Ingredients

1 kg/2 1/4 lb beef
fillet
-
60 ml/4 tbsp olive
oil
-
225 g/8 oz
mushrooms, sliced
-
2 shallots, chopped
-
15 g/1 tbsp
butter
-
30 ml/2 tbsp plain
(all-purpose) flour
-
250 ml/8 fl oz/1 cup beef stock
-
90 ml/6 tbsp sherry
-
2.5 ml/1/2 tsp green
peppercorns
-
Grated rind and juice of
1/2 lemon
-
120 ml/4 fl
oz/1/2 cup double (heavy) cream
Method:

Cut the beef into thin slices. In a large frying
pan (skillet), heat the oil and cook the slices
quickly for 1 minute on each side.

Remove and keep
warm. Add the mushrooms to the pan and cook for 5
minutes. Transfer to a small bowl, and set aside.

In
the same pan melt the butter, add the shallots and
cook for 2 minutes. Stir in the flour, blending well
with a small wire whisk.

Slowly add the stock, and
keep stirring. Cook for 3-4 minutes until the sauce
thickens.

Stir in the sherry, green peppercorns,
lemon rind and juice, cream and salt. Mix well, and
simmer for 2 minutes.

Place the beef slices and
mushrooms in the sauce and bring to the boil over a
high heat. Immediately remove from the heat and
serve.
