Italian Meat - Lamb Recipes - Aubergine with Lamb (Melanzane con Agnello) Recipe

Ingredients

  • 1 large onion, chopped

  • 2 garlic cloves, crushed

  • 1 green (bell) pepper, chopped

  • 15 ml/1 tbsp oil

  • 1 large aubergine (eggplant), chopped

  • 450 g/1lb/4 cups minced (ground) lamb

  • 400 g/14 oz/1 large can chopped tomatoes

  • Salt and freshly ground black pepper


Method:

  1. Fry (sauté) the onion, garlic and green pepper in the hot oil and transfer to a casserole dish (Dutch oven). Mix well.

  2. Fry the aubergine and add to the dish. Crumble in the lamb and pour over the tomatoes.

  3. Season with the salt and pepper and cook in a preheated oven for 30 minutes at 180°C/350°F/gas mark 4.
