Aubergine with Lamb (Melanzane con Agnello)
Recipe
Ingredients

1 large onion,
chopped
-
2 garlic cloves,
crushed
-
1 green (bell)
pepper, chopped
-
15 ml/1 tbsp oil
-
1 large aubergine
(eggplant), chopped
-
450 g/1lb/4 cups minced (ground) lamb
-
400 g/14 oz/1 large
can chopped tomatoes
-
Salt and freshly
ground black pepper
Method:
-
Fry (sauté) the onion,
garlic and green pepper in the hot oil and transfer
to a casserole dish (Dutch oven). Mix well.
-
Fry the aubergine and add to the dish. Crumble in the lamb
and pour over the tomatoes.

Season with the salt and
pepper and cook in a preheated oven for 30 minutes
at 180°C/350°F/gas mark 4.
