Italian Meat - Pork, Ham and Sausage Recipes - Bacon and Beans (Pancetta e Fagioli) Recipe

Ingredients

  • 15 ml/1 tbsp olive oil

  • 2 onions, sliced

  • 350 g/12 oz pancetta

  • 2 garlic cloves, crushed

  • 450 g/1 lb fresh or frozen broad (lima) beans

  • 90 ml/6 tbsp white wine

  • Salt and freshly ground black pepper

  • 15 ml/1 tbsp chopped fresh sage

  • 15 ml/1 tbsp chopped fresh thyme

  • 2.5 ml/1/2 tsp paprika (optional)


Method:

  1. Heat the oil in a pan and try (sauté) the onions for 3 minutes. Dice the pancetta and add to the pan with the crushed garlic.

  2. Fry for 5 minutes until browned and stir in the broad beans, wine, salt and pepper.

  3. Cook for 10 minutes until the beans are tender and stir in the sage and thyme.

  4. Transfer to a warmed serving dish and sprinkle with the paprika if required.
