Beef Slices in Orange Sauce (Fette di Manzo in Salsa di
Arancia)

1 orange
45 g/3
tbsp unsalted (sweet) butter
4 spring onions
(scallions) chopped
2 celery sticks, chopped
5 ml/1 tsp chopped
fresh oregano
Freshly ground black pepper
25 g/1/2 cup
breadcrumbs
60 ml/4 tbsp Marsala
50 g/1/2 cup
pine nuts
Salt
6 thin slices
braising beef
6 thin slices
prosciutto
30 ml/2 tbsp olive
oil
1 litre/4 1/4 cups beef stock
Salt and freshly ground
black pepper
Plain boiled rice, to serve
Method:
Thinly pare the rind from half the orange and cut
into thin strips. Grate the remainder. Squeeze the
juice.
Heat 15g/1 tbsp butter and add the
spring onions, celery, oregano and pepper to taste.
Cook, stirring, until the onions become pale
yellow.
Place the breadcrumbs into a mixing bowl,
and add the onion mixture and grated orange rind.
Add 30 ml/2 tbsp of the Marsala, the pine nuts and
salt to taste. Blend well.
Spoon equal amounts on to
the beef slices, pressing it down with your fingers
to help it adhere. Place a slice of prosciutto on
top of each beef slice.
Roll up the meat, beginning
with the narrower end, and secure each roll with a
cocktail stick (toothpick) or tie with string.
Heat
the remaining butter and the olive oil and brown the
beef on all sides for 6-8 minutes. Pour off the
fat.
Add the remaining Marsala, the stock and the
orange juice. Season to taste.
Cover tightly, and
simmer for 1 hour or longer, until the beef is
tender. Remove the meat and boil the sauce rapidly
to reduce slightly.
Discard the cocktail sticks or
string from the meat and return to the sauce. Serve
piping hot with plain boiled rice.
