Italian Meat Recipes - Beef-stuffed Peppers (Peperoni con Ripieno di Manzo) Recipe

Ingredients

  • 4 green (bell) peppers

  • 300 g/11 oz/2 1/4 cups lean minced (ground) beef

  • 1 garlic clove, crushed

  • 1 onion, finely chopped

  • 100 g/4 oz mushrooms, chopped

  • 5 ml/1 tsp chopped fresh herbs

  • Salt and freshly ground black pepper

  • 250 ml/8 fl oz/1 cup tomato juice


Method:

  1. Slice the tops off the stalk end of the peppers and reserve them to use as lids.

  2. Remove and discard the seeds and the white pith from inside each pepper.

  3. Mix together the beef, garlic, onion, mushrooms, herbs and seasoning. Spoon the mixture into the peppers and cover with the reserved tops.

  4. Arrange the peppers upright in a large saucepan and pour over the tomato juice.

  5. Cover with a lid and simmer gently for 40 minutes. Serve hot surrounded by the cooking liquid.
