Italian Meat - Poultry and Game Recipes - Chicken with Apples and Lemon Sauce (Pollo con Mele e Salmoriglio) Recipe

Ingredients

  • 3 apples, cored and quartered

  • 30 ml/2 tbsp lemon juice

  • 4 skinless chicken breasts

  • 30 ml/2 tbsp olive oil

  • 30 ml/2 tbsp honey

  • 45 ml/3 tbsp water

  • 5 ml/1 tsp ground cinnamon

  • 1 quantity Lemon Sauce


Method:

  1. Put the apples in a bowl with the lemon juice. Fry (sauté) the chicken in the olive oil for 6 minutes on each side and place in an ovenproof dish.

  2. Add the apples to the chicken and pour over the honey and water.

  3. Sprinkle with the cinnamon and place in a preheated oven at 180C/350F/gas mark 4 for 10 minutes, stirring half­way through Cooking. Serve with Lemon Sauce.
