Chicken and Carrots (Pollo e Carole) Recipe
Ingredients

30 ml/2 tbsp oil
-
4 chicken portions
-
450 g/1lb carrots,
chopped
-
1 garlic clove,
crushed
-
1 onion, chopped
-
15 ml/1 tbsp plain
(all-purpose) flour
-
600 ml/2 1/2 cups chicken
stock
-
450 g/1lb potatoes, cut into chunks
Method:

Heat the oil in a
flameproof casserole dish (Dutch oven). Brown the
chicken on all sides and transfer to a plate.

Brown
the carrots, garlic and onion and sprinkle with the
flour. Cook for 1 minute and gradually stir in the
stock.

Heat for 2 minutes, stirring until the gravy
thickens. Stir in the potatoes.

Return the meat to
the pan, cover with a lid and cook in a preheated
oven at 160°C/325°F/gas mark 3 for 2 1/2 hours.
