Chicken in Marsala Sauce (Pollo al Marsala) Recipe
Ingredients

30 ml/2 tbsp oil
-
4 chicken joints
-
3 celery sticks,
cut into chunks
-
1 garlic clove,
crushed
-
1 onion, chopped
-
25 g/1/4 cup
plain (all-purpose) flour
-
600 ml/2 1/2
cups chicken stock
-
60 ml/4 tbsp Marsala
Method:
-
Heat the oil in a large saucepan and brown the chicken on all sides.
Remove to a plate.

Brown the celery, garlic and
onion and sprinkle over the flour. Cook for 1 minute
and gradually stir in the stock.

Heat for 2 minutes,
stirring until the sauce thickens and stir in the Marsala.
-
Return the meat to the pan,
cover with a lid, reduce the heat
and cook for 1 hour, stirring occasionally.
