Italian Meat - Poultry and Game Recipes - Chicken in Marsala Sauce (Pollo al Marsala) Recipe

Ingredients

  • 30 ml/2 tbsp oil

  • 4 chicken joints

  • 3 celery sticks, cut into chunks

  • 1 garlic clove, crushed

  • 1 onion, chopped

  • 25 g/1/4 cup plain (all-purpose) flour

  • 600 ml/2 1/2 cups chicken stock

  • 60 ml/4 tbsp Marsala


Method:

  1. Heat the oil in a large saucepan and brown the chicken on all sides. Remove to a plate.

  2. Brown the celery, garlic and onion and sprinkle over the flour. Cook for 1 minute and gradually stir in the stock.

  3. Heat for 2 minutes, stirring until the sauce thickens and stir in the Marsala.

  4. Return the meat to the pan, cover with a lid, reduce the heat and cook for 1 hour, stirring occasionally.
