Chicken with Sherry Vinegar and Tarragon (Pollo con
Sherry Aceto e Dragonella) Recipe
Ingredients
Method:

In a small bowl blend the tomato puree with the
sherry vinegar, sherry and mustard.

Beat in the
olive oil. Place the meat on foil on a grill
(broiler) rack and brush the sauce over the chicken
pieces.
-
Grill (broil) the chicken for 10 minutes on
each side, remove from the heat and brush over
another layer of the sauce.
-
Return to the grill and
cook for a further 10-15 minutes on each side.
-
Sprinkle over the tarragon leaves and serve
immediately.
