Italian Meat - Poultry and Game Recipes - Chicken with Sherry Vinegar and Tarragon (Pollo con Sherry Aceto e Dragonella) Recipe

Ingredients

  • 30ml/2 tbsp tomato puree

  • 60ml/4 tbsp sherry vinegar

  • 60ml/4 tbsp sherry

  • 10ml/2 tsp made mustard

  • 30ml/2 tbsp olive oil

  • 4 chicken portions

  • 30ml/2 tbsp chopped fresh tarragon


Method:

  1. In a small bowl blend the tomato puree with the sherry vinegar, sherry and mustard.

  2. Beat in the olive oil. Place the meat on foil on a grill (broiler) rack and brush the sauce over the chicken pieces.

  3. Grill (broil) the chicken for 10 minutes on each side, remove from the heat and brush over another layer of the sauce.

  4. Return to the grill and cook for a further 10-15 minutes on each side.

  5. Sprinkle over the tarragon leaves and serve immediately.
