Chuck Steak in Red Wine (Manzo alla Perugina)
Recipe
Ingredients

1 onion, chopped
-
50 g/2 oz/1/4 cup
unsalted (sweet) butter
-
1 kg/2 1/4 lb chuck steak (or
rump)
-
30 ml/2 tbsp plain
(all-purpose) flour
-
90 ml/6 tbsp red wine
-
45 ml/3 tbsp red
wine vinegar
-
250 ml/8 fl oz/1
cup beef stock
-
15 ml/1 tbsp
capers, chopped
-
Salt and freshly
ground black pepper

250 ml/8 fl oz/1 cup single
(light) cream
Method:
-
In a frying pan (skillet), cook the onion in the
butter for 5 minutes. Remove with a draining spoon
and set aside.

Cut the meat into 2.5 cm/1 in cubes
and coat with the flour. Fry (sauté) in the butter
to seal on all sides.

When the steak is brown, pour
over the red wine and red wine vinegar and cook
rapidly until the liquid has evaporated.

Pour in
the stock, lower the heat and simmer. Add the
capers. Return the onion to the pan and stir well.

Season with salt and pepper and cover with a lid. Simmer for 2
1/2 hours until the meat is tender, adding
a little water or stock if the stew becomes too dry.

Add the cream, stir and season to taste. Serve very
hot.
