Ingredients

  • 15 ml/1 tbsp olive oil

  • 1 large onion, cut into rings

  • a chicken thighs

  • 150 ml/2/3 cup chicken stock

  • 30 ml/2 tbsp chopped fresh basil

  • Juice and rind of 1 lemon

  • 5 ml/1 tsp peppercorns, lightly crushed

  • 15 ml/1 tbsp water

  • 5 ml/1 tsp corn flour (cornstarch)

  • 15 ml/1 tbsp chopped fresh chives


Method:

  1. Heat the oil and try (sauté) the onion. Add the chicken thighs and cook for 5 minutes, turning them until they are lightly brown all over.

  2. Pour the stock into the frying pan (skillet) and add the basil. Bring to the boil, cook for 3 minutes until the liquid is reduced by half.

  3. Lower the heat and add the lemon juice and rind. Add the pepper­corns with the chicken and cover with a lid. Cook for 30 minutes.

  4. Blend the water and corn flour together and stir into the sauce. Cook for 1 minute.

  5. Arrange on a hot serving dish and garnish with chopped chives.
