Citrus Chicken (Pollo con Agrumi)
Recipe
Ingredients

15 ml/1 tbsp olive
oil
-
1 large onion, cut
into rings
-
a chicken thighs
-
150 ml/2/3
cup chicken stock
-
30 ml/2 tbsp
chopped fresh basil
-
Juice and rind of 1 lemon
-
5 ml/1 tsp
peppercorns, lightly crushed
-
15 ml/1 tbsp water
-
5 ml/1 tsp corn flour (cornstarch)
-
15 ml/1 tbsp
chopped fresh chives
Method:
-
Heat the oil and try (sauté)
the onion. Add the chicken thighs and cook for 5
minutes, turning them until they are lightly brown
all over.

Pour the stock into the frying pan
(skillet) and add the basil. Bring to the boil, cook
for 3 minutes until the liquid is reduced by half.

Lower the heat and add the lemon juice and rind. Add
the peppercorns with the chicken and cover with a lid.
Cook
for 30 minutes.

Blend the water and
corn flour together and stir into the sauce. Cook for
1 minute.

Arrange on a hot serving dish and garnish with
chopped chives.
