Italian Meat - Poultry and Game Recipes - Classic Italian Casserole (Classico Sformato Italiano) Recipe

Ingredients

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter

  • 4 chicken portions

  • 2 large onions, chopped

  • 600 ml/2 1/2 cups chicken stock

  • 450 g/1lb fresh tomatoes, skinned, seeded and chopped

  • 15 ml/1 tbsp tomato puree (paste)

  • 2 garlic cloves, crushed

  • Salt and freshly ground black pepper

  • 30 ml/2 tbsp chopped fresh herbs Pasta, to serve


Method:

  1. Melt the butter in a large pan. Place the chicken in the pan with the onions and cook over a moderate heat until the chicken is browned on all sides and the onions are translucent.

  2. Pour in the stock and bring to the boil. Lower the heat and add the tomatoes and tomato puree.

  3. Stir in the crushed garlic. Season with the salt and pepper and cover the pan. Simmer for 50 minutes. Sprinkle with the fresh herbs and serve with pasta.
