Corsican Meatballs (Polpette alla Corsica)

Ingredients

100
g/4 oz/1 cup fine cracked wheat
-
150 ml/2/3 cup
boiling water
-
2 eggs, beaten
-
Plain (all-purpose)
flour, for dusting
-
400 g/14 oz/3 1/2 cups minced
(ground) beef
-
2 onions, finely
chopped
-
1 garlic clove,
crushed
-
5 ml/1 tsp cayenne
-
Salt and freshly
ground black pepper

Oil for shallow-frying
Method:
-
Add the cracked wheat to the boiling water, stir and
cook for 20 minutes. Leave to cool for 8-10 minutes
and blend in the eggs.

Dust the hands with a little
flour and divide the mixture into 8 balls. Flatten
each ball to form a round and set aside.

Combine the
beef, onions, garlic and cayenne and season with the
salt and pepper.

Form into 8 balls slightly smaller
than the cracked wheat balls. Flatten each one to
form rounds in the same manner.

Place a meat round
in the centre of each cracked wheat round and roll
up into a sausage shape. Roll each one in a little
flour.

Heat a little oil in a shallow pan and fry (sauté)
the rolls for 6-8 minutes until they are golden and
cooked through. Drain on kitchen paper and serve.
