Devilled Chicken (Pollo Alla Diavola)

Ingredients

450 g/1 lb cold
cooked chicken
-
30 ml/2 tbsp tomato puree (paste)
-
30
ml/2 tbsp white wine vinegar
-
2.5 ml/1/2 tsp cayenne
-
10 ml/2 tsp made
mustard
-
5 ml/1 tsp chopped
fresh sage

30 ml/2 tbsp olive oil
Method:

Cut the chicken into 5 cm/2 in pieces. In a small bowl blend the tomato
puree with the white wine vinegar, cayenne,
readymade mustard and sage.

Beat in the olive oil.
Lay the meat on a baking sheet and brush the sauce
over the chicken pieces.

Grill (broil) the chicken
for 5 minutes on each side, remove from the heat and
brush over another layer of the sauce.

Return to the
grill (broiler) and cook for a further minute on
each side.
