Italian Meat - Poultry and Game Recipes - Devilled Chicken (Pollo Alla Diavola) Recipe

Ingredients

  • 450 g/1 lb cold cooked chicken

  • 30 ml/2 tbsp tomato puree (paste)

  • 30 ml/2 tbsp white wine vinegar

  • 2.5 ml/1/2 tsp cayenne

  • 10 ml/2 tsp made mustard

  • 5 ml/1 tsp chopped fresh sage

  • 30 ml/2 tbsp olive oil


Method:

  1. Cut the chicken into 5 cm/2 in pieces. In a small bowl blend the tomato puree with the white wine vinegar, cayenne, ready­made mustard and sage.

  2. Beat in the olive oil. Lay the meat on a baking sheet and brush the sauce over the chicken pieces.

  3. Grill (broil) the chicken for 5 minutes on each side, remove from the heat and brush over another layer of the sauce.

  4. Return to the grill (broiler) and cook for a further minute on each side.
