Italian Meat Recipes - Fillet of Beef with Paprika (Filetto di Manzo alla Paprika) Recipe

Ingredients

  • 25 g/1 oz/2 tbsp unsalted (sweet) butter

  • 4 fillet steaks

  • Salt and freshly ground black pepper

  • 1 wineglass red wine

  • 5 ml/1 tsp paprika

  • 150 ml/2/3 cup double (heavy) cream

  • 15 ml/1 tbsp chopped fresh parsley


Method:

  1. Melt the butter in a frying pan (skillet). Add the steaks and season with salt and pepper.

  2. Fry (sauté) until golden brown on both sides and cooked to your liking. Remove from the pan and keep warm.

  3. Add the wine to the pan juices and boil for 2 minutes. Stir in the paprika and cream. Simmer until thickened and slightly reduced.

  4. Stir in the parsley, taste and re-season, if necessary. Spoon over the steaks and serve straight away.
