Ham and Green Peas (Proscuitto e Piselli Verdi)
Recipe
Ingredients

450 g/1lb fresh
shelled green peas
-
5 ml/1 tsp salt
-
50 g/1/4 cup
unsalted (sweet) butter
-
1 onion, sliced
-
8 thick slices
prosciutto, cut in strips
-
15 ml/1 tbsp chopped fresh
basil
-
Freshly ground black pepper
Method:
-
Put the peas into a
large saucepan with the salt and add enough water to
just cover.
-
Bring to the boil, reduce the heat and
cook for 8 minutes until tender.

Melt the butter in
a trying pan (skillet) and cook the onion for 5
minutes.
-
Add the prosciutto and basil and season
with the pepper. Stir well and cook for 10 minutes.

Drain the peas and stir into the ham mixture.
Transfer to a heated serving dish.
