Italian Meat - Pork, Ham and Sausage Recipes - Ham and Green Peas (Proscuitto e Piselli Verdi) Recipe

Ingredients

  • 450 g/1lb fresh shelled green peas

  • 5 ml/1 tsp salt   

  • 50 g/1/4 cup unsalted (sweet) butter

  • 1 onion, sliced

  • 8 thick slices prosciutto, cut in strips

  • 15 ml/1 tbsp chopped fresh basil

  • Freshly ground black pepper


Method:

  1. Put the peas into a large saucepan with the salt and add enough water to just cover.

  2. Bring to the boil, reduce the heat and cook for 8 minutes until tender.

  3. Melt the butter in a trying pan (skillet) and cook the onion for 5 minutes.

  4. Add the prosciutto and basil and season with the pepper. Stir well and cook for 10 minutes.

  5. Drain the peas and stir into the ham mixture. Transfer to a heated serving dish.
