Italian Meat - Lamb Recipes - Honeyed Roast Lamb (Arrosto di Agnello al Miele) Recipe

Ingredients

  • 90 ml/6 tbsp honey

  • 30 ml/2 tbsp white wine vinegar

  • 30 ml/2 tbsp finely chopped fresh root ginger

  • 250 ml/1 cup orange juice

  • 1.5 kg/3lb loin of lamb


Method:

  1. Combine the first four ingredients in a large bowl and add the lamb. Chill for at least 4 hours, turning from time to time.

  2. Place the lamb in a roasting tin (pan) and pour the marinade over the meat.

  3. Bake in a preheated oven at 180°C/350°F/gas mark 4 for 2 hours, basting with the marinade from time to time.
