Hunter-style Chicken (Pollo alla Cacciatora) Recipe
Ingredients

4 chicken portions
-
30 ml/2 tbsp olive
oil
-
75 ml/5 tbsp tomato
puree (paste)
-
30 ml/2 tbsp capers
-
2 canned anchovy
fillets, finely chopped
-
1 garlic clove,
chopped
-
1 large sprig of
rosemary
-
90 ml/6 tbsp dry
white wine
-
150 ml/2/3 cup
chicken stock
-
Grated rind and juice of
1/2 lemon
-
Salt and freshly
ground black pepper
-
4 slices Ciabatta bread, fried
in olive oil, to garnish
Method:
-
Wipe the chicken and brown in the oil in a flameproof casserole (Dutch
oven).
-
Add the remaining ingredients except the
fried Ciabatta bread.
-
Bring to the boil, reduce the
heat, cover and simmer very gently for 40 minutes or
until the chicken is tender.

Carefully lift the
chicken out on to a serving dish. Spoon off any
excess oil from the cooking juices. Discard the
rosemary.

Boil
rapidly for 1 minute to thicken, if necessary,
then taste and re-season.

Spoon over the chicken and
garnish with the fried bread.
