Italian Meat - Poultry and Game Recipes - Hunter-style Chicken (Pollo alla Cacciatora) Recipe

Ingredients

  • 4 chicken portions

  • 30 ml/2 tbsp olive oil

  • 75 ml/5 tbsp tomato puree (paste)

  • 30 ml/2 tbsp capers

  • 2 canned anchovy fillets, finely chopped

  • 1 garlic clove, chopped

  • 1 large sprig of rosemary

  • 90 ml/6 tbsp dry white wine

  • 150 ml/2/3 cup chicken stock

  • Grated rind and juice of 1/2 lemon

  • Salt and freshly ground black pepper

  • 4 slices Ciabatta bread, fried in olive oil, to garnish


Method:

  1. Wipe the chicken and brown in the oil in a flameproof casserole (Dutch oven).

  2. Add the remaining ingredients except the fried Ciabatta bread.

  3. Bring to the boil, reduce the heat, cover and simmer very gently for 40 minutes or until the chicken is tender.

  4. Carefully lift the chicken out on to a serving dish. Spoon off any excess oil from the cooking juices. Discard the rosemary.

  5. Boil rapidly for 1 minute to thicken, if necessary, then taste and re-season.

  6. Spoon over the chicken and garnish with the fried bread.
