Italian Braised Lamb (Agnello Brasato All' Italiano)

Ingredients

8 potatoes
-
45 ml/3 tbsp olive
oil
-
1 onion, cut in
quarters
-
1 garlic clove,
chopped
-
1.5 kg/3 lb
shoulder of lamb
-
600 ml/2 1/2
cups lamb or chicken stock
-
4 large tomatoes,
chopped
-
5 ml/1 tsp chopped
fresh oregano
-
Salt and freshly ground black pepper

100 g/4 oz peas, cooked
Method:

Peel and cut the potatoes into chunks. Pour the oil into a large saucepan
and try (sauté) the onion and garlic for 2 minutes.

Brown the meat on all sides and stir in the stock,
tomatoes, oregano, salt and pepper.

Bring to the
boil, lower the heat and cook for 2 hours, stirring
occasionally.

Add the potatoes and continue cooking
for 20 minutes. Stir in the peas and heat through.
