Italian Meat - Lamb Recipes - Italian Braised Lamb (Agnello Brasato All' Italiano) Recipe

Ingredients

  • 8 potatoes

  • 45 ml/3 tbsp olive oil

  • 1 onion, cut in quarters

  • 1 garlic clove, chopped

  • 1.5 kg/3 lb shoulder of lamb

  • 600 ml/2 1/2 cups lamb or chicken stock

  • 4 large tomatoes, chopped

  • 5 ml/1 tsp chopped fresh oregano

  • Salt and freshly ground black pepper

  • 100 g/4 oz peas, cooked


Method:

  1. Peel and cut the potatoes into chunks. Pour the oil into a large saucepan and try (sauté) the onion and garlic for 2 minutes.

  2. Brown the meat on all sides and stir in the stock, tomatoes, oregano, salt and pepper.

  3. Bring to the boil, lower the heat and cook for 2 hours, stirring occasionally.

  4. Add the potatoes and continue cooking for 20 minutes. Stir in the peas and heat through.
