Italian Chicken with Basil Sauce (Pollo all' Italiano
con Salsa al Basilico)
Recipe
Ingredients
-
4 chicken breast
fillets, skinned
-
Freshly ground black pepper
-
100 g/4 oz shallots
(or 1
large onion), chopped
-
60 ml/4 tbsp water
-
350 g/12 oz courgettes (zucchini), grated
-
30 ml/2 tbsp oil
-
15 ml/1 tbsp
capers, chopped
-
60 ml/4 tbsp
chopped fresh basil
-
15 g/1 tbsp
butter
Method:
-
Sprinkle the chicken
with freshly ground black pepper. Place the shallots
in a saucepan with the water.

Bring to the boil and
cook until they are translucent and the water has
reduced by half. Stir in the courgettes and half of
the oil.

Cover and cook over a low heat for 10
minutes, stirring frequently, until the courgettes
are soft and pulpy.

Pass the vegetables through a food mill, sieve (strainer) or blend in a food
processor. Stir in the capers and basil and season
with pepper.

Heat the remaining oil in a frying pan
(skillet) and sear the chicken over a high heat for
30 seconds on each side.

Lower the heat and cook the
meat for 10-12 minutes, turning it once or twice.
Reheat the basil sauce and stir in the butter.

Cut
the chicken diagonally into thin slices and spoon
over the sauce.
