Italian Lamb (Agnello all' Italiano)
Recipe
Ingredients

1 aubergine,
(eggplant) sliced
-
Freshly ground black pepper
-
45 ml/13
tbsp olive oil
-
15 g/1 tbsp
unsalted (sweet) butter
-
1 garlic clove,
crushed
-
4 courgettes
(zucchini), sliced
-
1 green (bell) pepper, sliced
-
4 tomatoes,
skinned, seeded and chopped
-
30 ml/2 tbsp tomato
puree (paste)
-
5 ml/1 tsp chopped fresh oregano
-
1 bay
leaf
-
900 g/2 lb lamb
chops
-
Grated rind and
juice of 1
lime
Method:

Sprinkle the aubergine with salt and leave for 30 minutes. Rinse and dry
on kitchen paper.

Rub salt and pepper over the
lamb. Heat half the oil in a frying pan and cook
the aubergine slices for 3 minutes on each side
until they are browned.

Remove from the pan and
drain on kitchen paper. Melt the butter
in a saucepan and fry (sauté) the garlic.

Add the courgettes and cook for 3 minutes, stirring all the
time. Add the aubergine slices, green pepper,
tomatoes, tomato puree, oregano and the bay leaf.

Season with salt and pepper. Reduce the heat to low
and cook the vegetables for 5 minutes.

Add the
remaining oil to the frying pan and cook the lamb
chops for 6 minutes on each side.

Remove from the
pan and keep warm. Stir the lime rind and juice into
the vegetables and bring to the boil.

Remove the bay
leaf and pour the vegetables over the chops.
