Salt
and freshly ground black pepper

30 ml/2 tbsp plain
(all-purpose) flour
-
1.25 kg/2 3/4 lb beef topside
-
15 ml/1 tbsp olive
oil
-
15 g/1 tbsp
unsalted (sweet) butter

2 garlic cloves,
chopped
-
1 onion, chopped
-
450 ml/2 cups
dry red wine
-
4 tomatoes,
skinned, seeded and chopped
-
250 ml/8 fl oz/1 cup passata (sieved tomatoes)
-
2.5 ml/1/2 tsp chopped
fresh sage
-
2.5 ml/1/2 tsp chopped
fresh oregano
-
2.5 ml/1/2 tsp chopped fresh thyme
-
2 bay leaves
-
30 ml/2 tbsp chopped
fresh parsley
Method:
-
Season the flour and liberally pat all over the
beef. Heat the oil and butter in a large flameproof
casserole (Dutch oven) and brown the meat well on
all sides.

Add the garlic and onion, and cook for 2
minutes, stirring. Add the wine and allow to cook,
uncovered, for 10 minutes.

Stir in the tomatoes, passata, sage, oregano, thyme, and bay leaves. Cover
the casserole, and simmer for 2 1/2 hours.

To serve,
remove the meat from the casserole, and set on a
plate, pour the sauce over it, and sprinkle the
roast with the chopped parsley.
