Lamb Catania (Agnello Catanese)
Recipe
Ingredients

30 ml/2 tbsp olive
oil
-
1 large red onion,
chopped
-
4 lamb cutlets
-
4 ripe tomatoes,
skinned, seeded and chopped
-
30 ml/2 tbsp lemon
juice
-
60 ml/4 tbsp chopped
fresh coriander (cilantro)
-
1 green chili,
seeded and chopped
-
Salt and freshly ground black
pepper
Method:
-
Place the oil in a frying pan (skillet) and add the onion.
Cook
for 1 minute and
add the lamb
cutlets.

Brown quickly all over, remove from the pan
and place in an ovenproof dish.
-
Add the tomatoes,
lemon juice and coriander to the oil in the pan and
cook for 5 minutes until the liquid has reduced.
-
Pour over the lamb and add the chi1li, salt and
pepper. Place in a preheated oven at 200°C/400°F/gas
mark 6 for 40 minutes and serve.
