Italian Meat - Lamb Recipes - Lamb Catania (Agnello Catanese) Recipe

Ingredients

  • 30 ml/2 tbsp olive oil

  • 1 large red onion, chopped

  • 4 lamb cutlets

  • 4 ripe tomatoes, skinned, seeded and chopped

  • 30 ml/2 tbsp lemon juice

  • 60 ml/4 tbsp chopped fresh coriander (cilantro)

  • 1 green chili, seeded and chopped

  • Salt and freshly ground black pepper


Method:

  1. Place the oil in a frying pan (skillet) and add the onion. Cook for 1 minute and add the lamb cutlets.

  2. Brown quickly all over, remove from the pan and place in an ovenproof dish.

  3. Add the tomatoes, lemon juice and coriander to the oil in the pan and cook for 5 minutes until the liquid has reduced.

  4. Pour over the lamb and add the chi1li, salt and pepper. Place in a preheated oven at 200°C/400°F/gas mark 6 for 40 minutes and serve.
