Ingredients

15 ml/1 tbsp olive
oil
-
2 onions, sliced
-
2 garlic cloves,
crushed
-
225 g/8 oz/1 1/3 cups
green lentils, soaked for 2 hours
and drained
-
450 g/1lb tomatoes,
skinned and chopped
-
600 ml/1 pt/2 1/2
cups pork or chicken stock
-
Salt and freshly
ground black pepper
-
450 g/1lb Italian sausages
-
30 ml/2 tbsp
chopped fresh parsley
Method:
-
Heat the oil in a pan and fry (sauté) the onions for
3 minutes.
-
Stir in the garlic and lentils and cook
for 1 minute. Add the tomatoes and stock and season
with salt and pepper.
-
Cover with a lid and simmer
for 40 minutes, stirring occasionally until the
lentils are tender.
-
Grill (broil) the sausages 10
minutes before the end of cooking.

Pour the lentils
into a serving dish, place the sausages on top and
garnish with the chopped parsley.
