Ingredients

  • 15 ml/1 tbsp olive oil

  • 2 onions, sliced

  • 2 garlic cloves, crushed

  • 225 g/8 oz/1 1/3 cups green lentils, soaked for 2 hours and drained

  • 450 g/1lb tomatoes, skinned and chopped

  • 600 ml/1 pt/2 1/2 cups pork or chicken stock

  • Salt and freshly ground black pepper

  • 450 g/1lb Italian sausages

  • 30 ml/2 tbsp chopped fresh parsley


Method:

  1. Heat the oil in a pan and fry (sauté) the onions for 3 minutes.

  2. Stir in the garlic and lentils and cook for 1 minute. Add the tomatoes and stock and season with salt and pepper.

  3. Cover with a lid and simmer for 40 minutes, stirring occasionally until the lentils are tender.

  4. Grill (broil) the sausages 10 minutes before the end of cooking.

  5. Pour the lentils into a serving dish, place the sausages on top and garnish with the chopped parsley.
