Italian Meat - Poultry and Game Recipes - Milan-style Chicken and Courgettes (Zucchini e Pollo Milanese) Recipe

Ingredients

  • 6 large courgettes (zucchini), thickly sliced

  • Oil for frying

  • 1 garlic clove, crushed

  • 3 boneless chicken breasts, sliced thinly

  • 2 eggs, beaten

  • 50 g/2 oz/1 cup fresh breadcrumbs

  • Salt and freshly ground black pepper


Method:

  1. Cook the courgettes in boiling, salted water for 5 minutes. Drain.

  2. Heat a little oil in a shallow pan. Add the crushed garlic and the chicken. Cook for 10 minutes, turning once.

  3. Remove to a warm serving plate and keep warm. Dip each courgette slice into the beaten egg and then into the breadcrumbs.

  4. Fry (sauté) the courgettes for two minutes until brown on both sides and serve while still hot with the chicken slices.
