Italian Meat Recipes - Mozzarella Meat Loaf (Polpettone con Mozzarella) Recipe

Ingredients

  • 75 g/3 oz Mozzarella cheese

  • 400g/1 lb Italian sausages

  • 5 pieces Italian bread

  • 175 ml/6 fl oz/3/4 cup milk

  • 900 g/2 lb/8 cups minced (ground) beef

  • 2 eggs, beaten

  • 2 onions, chopped

  • 30ml/2 tbsp chopped fresh parsley

  • 1 garlic clove, chopped

  • 50g/1/2 cup Parmesan cheese, grated

  • 45ml/3 tbsp passata (sieved tomatoes)

  • salt and freshly ground black pepper

  • 50g/2 oz/1 cup fresh breadcrumbs


Method:

  1. Remove the sausages from their casings and crumble into a bowl. Cut the Mozzarella into cubes.

  2. Soak the bread in milk for 5 minutes and squeeze dry. In a large bowl, combine the minced beef with the sausage.

  3. Add the eggs, onions, parsley, garlic, Parmesan cheese, Mozzarella, bread and passata. Add salt and pepper to taste.

  4. On a flat surface, shape the mixture into a loaf shape, roll in the breadcrumbs, and place in an oiled baking dish.

  5. Bake in a preheated oven at 180°C/350°F/gas mark 4 for 1 1/2 hours.

  6. Remove from the oven, and transfer the meat loaf to a warm serving plate. Serve sliced.
