Italian Meat - Poultry and Game Recipes - Mushroom and Chicken Assisi (Funghi e Pollo Assisi) Recipe

Ingredients

  • 1.25 kg/4lb oven-ready chicken

  • 50 g/2 oz/1/2 cup unsalted (sweet) butter

  • 225 g/8 oz mushrooms, chopped

  • 1 onion, chopped

  • 1 garlic clove, chopped

  • 15 ml/1 tbsp olive oil

  • 3 tomatoes, skinned and chopped

  • Salt and freshly ground black pepper

  • Chopped fresh herbs (optional)


Method:

  1. Joint the chicken into 8 pieces. Heat half the butter in a frying pan (skillet) and cook the mushrooms.

  2. Add the onion and chopped garlic and cook until the onion is slightly golden. Remove from the pan and set aside.

  3. Lay the chicken joints in the pan, add the remaining butter and the oil and cook until the pieces are a rich golden brown.

  4. Return the mushrooms and onions to the pan and stir in the chopped tomatoes. Season with the salt and pepper and simmer gently for 45 minutes.

  5. Place the pieces of chicken on a hot dish, pour over the sauce and garnish with freshly chopped herbs if liked.
