Neapolitan Beef (Manzo alla Napoletano)

Ingredients

15 ml/1 tbsp oil
-
2 onions, chopped
-
2 garlic cloves,
crushed
-
750 g/1 1/2 lb
braising steak, cubed

400 g/14 oz/1 large can chopped tomatoes
-
300 ml/1 1/4
cups red wine
-
150 ml/2/3 cup
beef stock
-
30 ml/2 tbsp tomato
puree (paste)
-
Salt and freshly ground black pepper
-
15 ml/1 tbsp chopped fresh oregano
-
1 red (bell)
pepper, diced
-
1 courgette
(zucchini), sliced
-
1 small aubergine
(eggplant), cut into chunks
Method:

Heat the oil in a flameproof casserole (Dutch oven).
Add the onions and cook until softened.

Stir in the
garlic and beef and cook until browned. Add the
tomatoes, wine, stock, tomato puree, salt and pepper
and bring to the boil.

Cover with a lid or foil and
place in a preheated oven at 180°C/350°F/gas mark 4
for 1 1/2 hours.

Remove the dish from the oven and
stir in the red pepper, courgette and aubergine.

Cover and return the casserole dish to the oven for
a further 30 minutes.
