Pizzaiola Steak (Manzo alla Pizzaiola)

Ingredients

450 g/1 lb rump or sirloin
steak, thinly sliced

60 ml/4 tbsp olive
oil
-
2 garlic cloves,
crushed
-
450 g/1 lb tomatoes,
skinned and chopped
-
30 ml/2 tbsp
chopped fresh parsley
-
30 ml/2 tbsp
chopped fresh basil
-
Salt and freshly
ground black pepper
Method:

Place the slices of meat between two sheets of
greaseproof (waxed) paper or Clingfilm (plastic
wrap) and flatten with a mallet until very thin.

Heat the oil in a large frying pan (skillet) and
gently fry (sauté) the steak for 2-3 minutes.

Add
the garlic, tomatoes and herbs and bring to the
boil. Cook over a high heat for 5 minutes. Season
with salt and pepper and serve at once.
