Pork with Apple and Juniper Berries (Carne di Maiale,
Mele e Bacche di Ginepro) Recipe
Ingredients

450 g/1 lb boneless pork
-
60 ml/4 tbsp olive oil
-
1 small onion, finely
chopped
-
120 ml/1/2 cup white wine
-
120 ml/1/2 cup pork or
chicken stock
-
2.5 ml/1/2 tsp chopped
fresh thyme
-
1 bay leaf
-
15 juniper berries, crushed
lightly
-
2 eating (dessert) apples,
cored and peeled
-
Salt and
freshly ground black pepper
Method:
-
Cut the meat into 2.5 cm/1 in
cubes. Put the oil and onion and pork in a trying
pan (skillet) and cook for 5 minutes to ensure all
the meat is browned.

Stir in the wine and cook for 2
minutes. Add the stock, thyme, bay leaf and juniper
berries.

Cut each apple into 8 segments,
add to the frying pan and season with salt and
pepper.

Cover with a lid and simmer
gently for 1 1/2 hours until the meat is tender.
