Italian Meat - Pork, Ham and Sausage Recipes - Pork with Apple and Juniper Berries (Carne di Maiale, Mele e Bacche di Ginepro) Recipe

Ingredients

  • 450 g/1 lb boneless pork

  • 60 ml/4 tbsp olive oil

  • 1 small onion, finely chopped

  • 120 ml/1/2 cup white wine

  • 120 ml/1/2 cup pork or chicken stock

  • 2.5 ml/1/2 tsp chopped fresh thyme

  • 1 bay leaf

  • 15 juniper berries, crushed lightly

  • 2 eating (dessert) apples, cored and peeled

  • Salt and freshly ground black pepper


Method:

  1. Cut the meat into 2.5 cm/1 in cubes. Put the oil and onion and pork in a trying pan (skillet) and cook for 5 minutes to ensure all the meat is browned.

  2. Stir in the wine and cook for 2 minutes. Add the stock, thyme, bay leaf and juniper berries.

  3. Cut each apple into 8 segments, add to the frying pan and season with salt and pepper.

  4. Cover with a lid and simmer gently for 1 1/2 hours until the meat is tender.
