Italian Meat - Pork, Ham and Sausage Recipes - Pork with Tomatoes and Onions (Carne di Maiale con Pomodori e Cipolle) Recipe

Ingredients

  • 4 pork cutlets

  • 60 ml/4 tbsp olive oil

  • 175 g/6 oz shallots, halved

  • 15 ml/1 tbsp brown sugar

  • 100 g/4 oz cherry tomatoes, halved

  • 400 g/14 oz/1 large can of chopped tomatoes

  • 5 ml/1 tsp chopped fresh basil

  • Salt and freshly ground black pepper


Method:

  1. Place the pork cutlets in a frying pan (skillet) with the oil and cook for 12 minutes until tender.

  2. Remove to a warm serving dish. Add the shallots to the pan with the sugar and cook on high for 5 minutes, stirring occasionally.

  3. Add both sorts of tomatoes and fry (sauté) for another minute.

  4. Spoon the shallots and tomatoes over the chops, sprinkle over the basil and salt and pepper and serve.
