Pork and Vegetables (Carne di Maiale e Verdura) Recipe
Ingredients

60 ml/4 tbsp olive oil
-
900 g/2 lb boneless pork
-
1 onion, finely chopped
-
100 g/4 oz carrots, sliced
-
450 g/1lb potatoes, roughly
chopped
-
2 large parsnips, chopped
-
120 ml/4 fl oz/1/2 cup
white wine
-
120 ml/4 fl oz/1/2 cup pork
or chicken stock
-
2.5 ml/1/2 tsp chopped
fresh thyme
-
1 bay leaf
-
2 sprigs of rosemary,
lightly crushed
-
Salt and freshly ground
black pepper

Pasta, to serve
Method:

Put the oil in a flameproof casserole dish (Dutch
oven) and brown the meat all over for 12-15 minutes.
Remove and keep warm.

Add the onion to the dish and cook for 5 minutes.
Add the carrots, potatoes and parsnips and cook
until browned.

Stir in the wine and cook for 2 minutes. Add the
stock, thyme, bay leaf and rosemary. Season with
salt and pepper and cover with a lid.

Simmer for 1 1/2 hours until the meat is tender,
remove the bay leaf and serve with a large bowl of
hot pasta.
