Italian Meat - Poultry and Game Recipes - Royal Peach Chicken (Pollo con Pesche alla Reggio) Recipe

Ingredients

  • 450 g/1 lb chicken breasts

  • 50 g/2 oz/1/4 cup unsalted (sweet) butter

  • Salt and freshly ground black pepper

  • 4 peaches, stoned (pitted) and sliced

  • 1 onion, cut into rings

  • 1 bay leaf

  • 250 ml/8 fl oz/1 cup white wine


Method:

  1. Cut the chicken into slices. Place in an ovenproof dish, dot with butter and season with salt and pepper.

  2. Cover with the peach slices and onion rings. Add the bay leaf to the dish.

  3. Pour over the white wine, cover with a lid or foil and bake in a preheated oven at 190°C/375°F/gas mark 5 for 35 minutes.
