Italian Meat Recipes - Sanremo-style Escalopes (Scaloppine alla Sanremese) Recipe

Ingredients

  • 8 thin slices of tender beef

  • 4 anchovy fillets, drained

  • 15 ml/1 tbsp capers

  • 1 garlic clove, peeled

  • 15 ml/1 tbsp pine nuts

  • 6 fresh basil leaves

  • 30 ml/2 tbsp olive oil

  • Salt and freshly ground black pepper

  • Grated rind and juice of 1/2 lemon


Method:

  1. Flatten the meat as much as possible between two sheets of greaseproof (waxed) paper or Clingfilm (plastic wrap).

  2. Chop the anchovies, capers, garlic, pine nuts and basil leaves. Pour the oil into a frying pan (skillet) and add the anchovy mixture.

  3. Lay the meat on the top, season with the salt and pepper and sprinkle over the lemon juice.

  4. Fry (sauté) for 6 minutes on each side and serve with the anchovy mixture spread over.
