Italian Meat - Pork, Ham and Sausage Recipes - Sausages with Beans (Salsicce e Fagioli) Recipe

Ingredients

  • 450 g/1lb/2 2/3 cups dried white cannellini beans, soaked overnight in cold water

  • 5 ml/1/2 tsp salt

  • 5 garlic cloves

  • 8 Italian pork sausages

  • 60 ml/4 tbsp olive oil

  • 4 fresh sage leaves

  • 15 ml/1 tbsp tomato puree (paste)


Method:

  1. Drain the beans, then place in a large pan and just cover with fresh water.

  2. Bring to the boil, boil rapidly for 10 minutes, then cover and simmer for about 1 1/2 hours until tender.

  3. Add the salt and 3 of the garlic cloves and simmer for a further 20 minutes. Add the sausages and cook for a further 15 minutes.

  4. Heat the oil in a large frying pan. Crush the remaining garlic and fry (sauté) for about 5 minutes until golden.

  5. Remove the sausages from the beans, place in the frying pan and fry for a few minutes until browned.

  6. Drain the beans and add them to the frying pan with the sage and the tomato puree.

  7. Cover and simmer for 15 minutes before serving.
