Sausage Fritters (Frittelle di Salsicce)
Recipe
Ingredients

100 g/4 oz salami,
cut into 5 mm/1/4 in slices
-
225 g/8 oz garlic sausage, in one piece
-
100 g/4 oz/1
cup plain (all-purpose) flour
-
2.5 ml/1/2 tsp salt
-
5 ml/1 tsp chopped
fresh oregano
-
30 ml/2 tbsp olive
oil
-
1 egg
-
175 ml/3/4
cup warm water
-
Oil for frying
-
Piquant Chinese
Sauce, to serve
Method:
-
Cut the salami slices in
quarters. Cut the garlic sausage in half lengthways
and cut again into 1 cm/1/2 in slices.
-
Put
15 ml/1 tbsp of the flour in a polythene bag
and add the salami and garlic sausages.

Shake well
until they are evenly coated and set aside. Place
the remaining flour in a bowl and stir in the salt,
oregano and oil.

Beat in the egg and water and
continue beating to form a smooth batter.

Heat the
oil in a frying pan (skillet) and dip the sausages
in the batter.

Fry (sauté) 4 or 5 pieces at a time
until they are golden brown. Drain on kitchen paper
and serve with Piquant Chinese Sauce.
