Italian Meat - Pork, Ham and Sausage Recipes - Sausage Fritters (Frittelle di Salsicce) Recipe

Ingredients

  • 100 g/4 oz salami, cut into 5 mm/1/4 in slices

  • 225 g/8 oz garlic sausage, in one piece

  • 100 g/4 oz/1 cup plain (all-purpose) flour

  • 2.5 ml/1/2 tsp salt

  • 5 ml/1 tsp chopped fresh oregano

  • 30 ml/2 tbsp olive oil

  • 1 egg

  • 175 ml/3/4 cup warm water

  • Oil for frying

  • Piquant Chinese Sauce, to serve


Method:

  1. Cut the salami slices in quarters. Cut the garlic sausage in half lengthways and cut again into 1 cm/1/2 in slices.

  2. Put 15 ml/1 tbsp of the flour in a polythene bag and add the salami and garlic sausages.

  3. Shake well until they are evenly coated and set aside. Place the remaining flour in a bowl and stir in the salt, oregano and oil.

  4. Beat in the egg and water and continue beating to form a smooth batter.

  5. Heat the oil in a frying pan (skillet) and dip the sausages in the batter.

  6. Fry (sauté) 4 or 5 pieces at a time until they are golden brown. Drain on kitchen paper and serve with Piquant Chinese Sauce.
