Ingredients

  • 450 g/1lb Italian sausages

  • 750 g/1 1/2 lb potatoes, cut in small even-sized pieces

  • 450 ml/3/4 pt/2 cups water

  • Salt and freshly ground black pepper

  • 15 g/1/2 oz/1 tbsp margarine or butter

  • 100 g/4 oz/1 cup prosciutto, chopped finely

  • 2.5 ml/1/2 tsp made mustard


Method:

  1. Remove the sausage meat from the skins and roll the meat into tiny balls. Flatten each ball out in the palm of your hand.

  2. Boil the potatoes for 20 minutes in the water, strain and save the potato liquid.

  3. Mash and season the potatoes with the salt and pepper and beat in the margarine or butter.

  4. Beat in a little of the potato water until the mashed potatoes are soft.

  5. Make a thick layer with this potato in the bottom of a greased ovenproof dish. Sprinkle over the chopped prosciutto.

  6. Spread the mustard on one side of each round of sausage and arrange, mustard side down on the mashed potato.

  7. Cook in a preheated oven at 180°C/350°F/gas mark 4 for 20 minutes until the sausage meat is golden brown.
