Italian Meat - Pork, Ham and Sausage Recipes - Sausage in Wine (Salsicce in Vino) Recipe

Ingredients

  • 450 g/1lb small Italian sausages

  • 250 ml/8 fl oz/1 cup white wine

  • 1 large bunch of rosemary

  • 3 eating (dessert) apples

  • Juice of 1/2 lemon


Method:

  1. Prick each sausage and place in a casserole dish. Cover with the wine and the rosemary.

  2. Place a lid on the casserole and cook in a preheated oven at 180°C/350°F/gas mark 4 for 35 minutes until the wine is absorbed and the sausages are browned.

  3. Remove the sausages from the dish and allow to cool. Peel and core the apples and cut into quarters.

  4. Place in a bowl and sprinkle over the lemon juice. Place the sausages and apple quarters alternately on the wooden skewers and serve as soon as possible.
