Italian Meat Recipes - Savory Meat Loaf (Polpettone Piccante) Recipe

Ingredients

  • 15 g/1/2 oz/1 tbsp unsalted (sweet) butter

  • 50 g/2 oz/1 cup bread crumbs

  • 350 g/12 oz/3 cups minced (ground) beef

  • 50 g/2 oz/1/4 cup ground rice

  • 2 large onions, finely chopped

  • Salt and freshly ground black pepper

  • 30 ml/2 tbsp chopped fresh mixed herbs

  • 45 ml/3 tbsp tomato puree (paste)

  • 1 egg, beaten


Method:

  1. Preheat the oven to 190°C/375°F/gas mark 5. Grease a 450 g/1lb loaf tin with the butter and coat with half the breadcrumbs.

  2. Put the remaining ingredients in a large bowl and mix thoroughly.

  3. Pack the mixture into the loaf tin and place in the oven. Bake for  1 1/4 hours.
